Rotisserie is a type of roasting generally used for large hunks of meat or, in some cases, entire animals.  The meat is skewered on a long solid rod and slow cooked over a fire or roasted in an oven.  The slow rotation of the meat cooks it evenly in its own juices, allowing the meat to baste itself.


The unique combination of herbs and spices outlined below makes a great seasoning mix for almost any poultry dish. Print it out and pass it around!

Rotisserie Chicken Recipe

Rotisserie Chicken Rub


INGREDIENTS:

4 teaspoons salt

2 teaspoons paprika

1 teaspoon onion powder


1 teaspoon dried thyme

1 teaspoon white pepper

1/2 teaspoon cayenne pepper

1/2 teaspoon black pepper

1/2 teaspoon garlic powder



DIRECTIONS:

Sift all ingredients together in a small bowl.

Rub chicken(s) inside and out with the rub mixture, and refrigerate for at least 4 hours before cooking.



Rotisserie Chicken


INGREDIENTS:

1 (3 pound) whole chicken

1 pinch of salt

1/4 cup of melted butter

1 tablespoon paprika

1/4 tablespoon ground black pepper



DIRECTIONS:


Season the inside of the chicken with a pinch of salt.

Place the chicken onto a rotisserie.

Set the grill on high and cook for 10 minutes.

During that time, quickly mix together the butter, 1 tablespoon of salt, paprika and pepper.

Turn the grill down to medium and baste the chicken with the butter mixture.

Close the lid and cook for an hour to 90 minutes, basting occasionally, until a meat thermometer inserted in the thigh registers an internal temperature of 180 degrees F (83 degrees C).

Remove the bird from the rotisserie and let it stand for 10 to 15 minutes.

Slice the meat into meal-sized portions with a carving knife and serve.


Serving Suggestion: Try your Rotisserie Chicken with cranberry sauce, apple sauce, barbecue sauce, or agave nectar mixed with brown mustard.
