This recipe is fun to improvise, with countless variations. A sample recipe is shown here, but feel free to include your own favorite vegetables and spices.
For example, you could add peas to this dish. Or you can use a teaspoon of curry powder instead of cumin.
1 medium onion, coarsely chopped
1 medium green pepper, coarsely chopped
2 cloves of garlic, finely minced
1 teaspoon of olive oil (or other vegetable oil)
1 pound of extra firm tofu, drained and crumbled
1 teaspoon of cumin
1 teaspoon of hot sauce
1 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of sugar
1 (19 ounce) can of red kidney beans, drained
1 (19 ounce) can of white kidney beans, drained
1 (28 ounce) can of diced tomatoes
1 (14 ounce) can of tomato sauce
3 medium carrots, sliced
2 tablespoons of chili powder
1 Saute the onion, garlic, and green pepper in the olive oil over a medium heat.
2 Add the tofu, cumin, hot sauce, salt, pepper, and sugar.
3 Saute the above ingredients until the mixture is crisp and lightly browned (about 10 minutes).
4 Add the rest of the ingredients (beans, tomatoes, tomato sauce, carrots, and chili powder).
5 Bring the recipe to a boil, then reduce heat and simmer for 45 minutes, gently stirring occasionally.
Suggestion: Serve with Saffron Rice or Indian Bread.

1 cup of coarsely chopped onion
1 clove of fresh garlic, minced
2 Tablespoons of chili powder
1 teaspoon of salt
1/2 teaspoon black pepper
1 teaspoon of granulated white sugar
1 1/2 cups canned tomato sauce
1/2 cup water
1. Saute the ground beef and onion in large skillet over a medium-high heat, until the meat is no longer pink.
2. Drain off the excess fat from the meat and onions.
3. Return the skillet to the heat and stir in the chili powder, sugar, salt and black pepper.
4. Stir in the tomato sauce and water.
5. Bring the mixture to a boil.
6. Reduce heat to low and simmer for about 15 minutes, or until the mixture thickens.
Suggestion: Serve with corn bread.
