The Perfect Layered Chocolate Cake


Ingredients 


For The Cake: 


  • 3 cups all-purpose flour
  • 3 cups granulated sugar 
  • 1/2 cup unsweetened cocoa powder 
  • 1 Tbsp baking soda 
  • 1/2 tsp baking powder 
  • 1-1/2 tsp salt 
  • 4 large eggs 
  • 1/2 cup buttermilk 
  • 1-1/2 cups warm water (or brewed coffee) 
  • 1/2 cup vegetable oil 
  • 2 tsp vanilla extract 



For the Frosting: 


  • 1/2 cup softened butter 
  • 8 oz softened cream cheese 
  • 1-1/2 cups unsweetened cocoa powder 
  • 3 tsp vanilla extract 
  • 8 cups powdered sugar 
  • 1/4 cup milk (as needed) 




Directions 


For The Cake:

  1. Preheat oven to 350° F. 
  2. Butter three cake pans about 9" in diameter. 
  3. Dust pans lightly with flour. 
  4. Mix flour, sugar, cocoa, baking soda, baking powder, and salt in a standing mixer set at low speed, until texture os consistent and ingredients are combined. 
  5. Add eggs, buttermilk, warm water, oil, and vanilla. 
  6. Beat at medium speed for about 2 minutes, until smooth. 
  7. Divide batter evenly among the three cake pans. 
  8. Bake for 30-35 minutes. Test for doneness with a toothpick, which should come out clean when inserted in the center of the cakes.  
  9. Remove cakes from oven and let cool 15 minutes. 
  10. Turn cakes out onto wire racks and let cool completely. 




For The Frosting: 

  1. Beat butter and cream cheese in a large mixing bowl until fluffy, using a fork or a hand mixer. 
  2. Add cocoa powder and vanilla. Beat until combined. 
  3. Beat it the powdered sugar 1 cup at a time. 
  4. Add milk as needed to achieve the right consistency. 
  5. Taste test the frosting — it should be light, airy, and sweet, tasting more like sugar than butter.
