This sweet, delicious Cookie Recipe is an old Italian breakfast favorite. 

Italian breakfast cookies are super easy to make and only about 105 calories per cookie.  


Most of the recipes shown in these pages are low in sugar, low in fat, easily prepared, and delicious. 

You can even enjoy recipes of unknown calorie content, as long as you take only a moderately sized portion. Then call it 350 calories and add it to your daily calorie count. 

Another smart thing you can try is to substitute the given recipe ingredients with their lower calorie counterparts whenever possible. For instance, when no baking is required, try substituting white sugar with Splenda.

COOKIE RECIPE



TRADITIONAL ITALIAN BREAKFAST COOKIE RECIPE


Ingredients  

  • 1 egg (room temperature)
  • 1 cup sugar, divided
  • 1/4 cup milk (room temperature)
  • 1/4 cup vegetable oil 
  • 1/2 tsp vanilla extract
  • 2-1/4 cups + 1 Tbsp all-purpose flour
  • 2 tsp baking powder
  • 1 pinch salt 




Directions: 

  1. Preheat oven to 350°F.
  2. Line 2 metal baking sheets with parchment paper. 
  3. Mix together flour, salt, and baking powder in a medium bowl.
  4. Beat egg with 3/4 cup sugar in a separate bowl until frothy. 
  5. Add milk, oil, and vanilla to the egg mixture. Blend until smooth. 
  6. Combine flour mixture, a little at a time, with the egg mixture, using a wooden spoon.
  7. Roll out the dough mix onto a lightly floured surface and knead gently until combined. Dough should be slightly sticky.
  8. Form the dough into oblong shapes, about 2-3 inches long and 3/4 of an inch wide, as shown in the above image. 
  9. Roll each cookie in the remaining 1/4 cup of sugar, and place the cookies onto the parchment lined baking sheet.
  10. Bake for 10-15 minutes.  


Makes 21 cookies at 105 calories per cookie. 



If you like, you can coat the cookies in cinnamon sugar instead of white sugar. 

Or you can leave them uncoated. They are warm, soft, and tasty just the way they are.
